It’s 2024 and for the past 23+ years, I’ve been focusing on the best ways to have healthy cholesterol levels for my own parents.
and I was out to dinner last night and a friend of mine was telling me how her father’s cholesterol has continued to get higher and higher over the past few years.
He has improved his diet, he’s exercising a little more, but unfortunately – no improvement at all in his cholesterol.
In fact, his cholesterol keeps getting worse.
Sadly, things are getting worse and if something doesn’t improve soon, his doctor is going to really push him into taking statins, cholesterol-lowering drugs and they don’t want to do that.

So I told her about all the different things he can do naturally to support healthy cholesterol and lipid levels.

However, she’s asked me a question that nobody has ever asked me before. She continued on and said
“well, my dad is stubborn and doesn’t like change… So let’s keep it simple for now. If there was ONE food you’d have him eat to improve his cholesterol, what would that be? What would make the biggest difference and improvement in his health?”
And I thought about it for a minute because lots of options ran through my head… better fats, lower sugars, different proteins, fibers, and so forth.

And then it hit me … I said “eat more vegetables, as much as he wants… lots of different colors, but especially the green ones.”
And I said this because vegetables are:
- Nutrient-dense and full of vitamins and minerals.
- They are anti-inflammatory, which improves blood flow.
- They’re high in fiber, which helps decrease plaque buildup.
- They’re low in sugar and fat, which is important because high sugar + fats, which is most of the foods we eat, increases cholesterol and plaque buildup.
- They’re loaded with phytochemicals and fight free radical damage.
- They slow down the aging process and keep your arteries flexible and healthy.
- Finally, they improve your hormones, which is a primary cause of cholesterol problems.
ONE Simple Food Change For Healthy Cholesterol
So, you don’t have to change anything else in your diet. Just start each meal by FIRST eating your vegetables.
Anything green is good.
Beets, onions, cabbage, broccoli, and artichokes are one of the best ones.
Season them with some sea salt, a little pepper, lemon juice, or even sweeten them up with some Stevia if you want to.
AFTER you’ve eaten your vegetables, then go ahead and eat whatever else you usually eat.
So, we’re making only ONE change in your diet and that’s to eat vegetables with every meal and to eat them FIRST, before the proteins, carbs, fats, desserts, etc.
